Tropical Guacamole


In celebration of Cinco de Mayo I wanted to make some fun guacamole, something I had not tried before.  I started thinking how great roasted plantains would be with avocado but I didn't have any around.  I knew I had avocados around and some ripe bananas and from there this recipe came about.
Isn't it funny the things we can think of while out on a run?  This one paid off--

This is DIVINE!













1 avocado
1/2 banana
1/4 chopped, roasted onion
2 serrano chiles, roasted and chopped
2-3 TBS mango ginger white stilton **see below
juice of 1/2 lemon
salt

Roast the onions and serrano by placing chopped onion and whole serrano peppers in a pan and toss with some olive oil.  Put in 450 oven and roast until browned and soft.  Let cool.

Mash avocado and banana together and add lemon juice.  Add roasted onion and serrano peppers (remove seed if you don't want it too hot).  Season with salt and crumble in the cheese.  Mix gently and serve.

**Mango Ginger White Stilton is sold at many grocery stores, do a Google search to see who has it near you.  If you don't find it you can use a plain White Stilton or a feta.
 Also then you can add some chopped mango and crystallized ginger and make your own blend!
