Peppers All'Arancia














Super fast side dish but beautiful.  Sweet mini peppers cook quick and can be left whole--they also look even better when served on a platter.  Roast in the oven or prepare on the grill.
No mini sweets?  Use red, yellow and/or orange bell peppers cut in large chunks. 











Embarrassingly easy...

Mini peppers
1 orange (navel, tangerine--whatever you have on hand)
garlic cloves

Toss peppers with garlic cloves (whole if these are small, cut large cloves in half) with olive oil.  Cut orange into 8 pieces and squeeze the juice over peppers and throw the orange segment in the pan.  Season with salt and roast at 475 until they are beginning to brown.
