Oh the humble broccoli, so good in so many ways. If you cook the broccoli a bit longer in the salted water and then break it with a spoon while it’s in the saute pan you will get an amazing pasta sauce. Mix in some orchiette—what time shall I arrive for dinner?
1 head broccoli
3 cloves garlic, 1 diced, 2 slivered
1 whole dried cayenne (or pepper flakes)
Zest of 1 lemon
Shaved cheese (parmeggiano, pecorino, aged cheddar)
Bring pot of salted water to a boil. Cut broccoli into individual stalks. Boil for 4-5 minutes until tender.
Drain and set aside. In medium saute pan, add garlic and cayenne along with 1 ½ TB olive oil. Saute until soft, 2 minutes. Add broccoli, cook until heated through. Season with salt.
Serve with zested lemon and shaved cheese.
